This was a recipe I made up during the Great Jam Drought of 2020 during the COVID-19 shelter-in-place order. I wanted a sweet treat, but most recipes I found had tons of sugar and I didn’t want to have to go through the canning process. Using dried figs instead of fresh was the key in my search for a quick treat with plenty of sweet!

 12 dried Turkish Figs
 ½ cup spring water
 ¼ cup dark brown sugar
 ½ tsp vanilla
 juice from 1/2 lemon

Add all ingredients to a small saucepan. View the gallery below to see all the steps!

Bring to a boil then reduce heat and simmer for 7 minutes. Remove from heat and let cool for 10minutes.

Use an immersion hand blender to blend thoroughly.

Scoop into a jar and keep refrigerated.
